Ingredients

The ingredients are:
  • 1 wholemeal pocket (67 gram) pita (Bazaar brand recommended)
  • Olive oil cooking spray
  • 70 grams skinless chicken breast fillet (trimmed of fat)
  • 1 tablespoons tomato puree (no added salt)
  • 1 tablespoon basil, finely shredded
  • 25 grams prosciutto ham (1 thin slice and torn)
  • 100 grams cherry tomatoes, halved
  • 20 grams bocconcini, torn
  • 25 grams baby rocket leaves (1 cup)
  • 1/2 cup small basil leaves
  • 5 grams parmesan cheese, shaved
We recommend you get your ingredients ready before you start cooking. Once you're ready, here are the steps to making this delicious recipe

How to Make

  • Step 1: Preheat oven to 200C (fan forced).

  • Step 2: Line a small oven tray with baking paper and put pita pocket on tray.

  • Step 3: Spray a small non stick frying pan with cooking spray and heat over a medium heat and add chicken and cook for 3 minutes on each side or until almost cooked through and transfer to a plate, rest for a minute or two and then thinly slice on the diagonal.

  • Step 4: Combine tomato puree and basil and spread mixture over pita pocket and then sprinkle over chicken and prosciutto and then half the tomato and bake for 5 minutes.

  • Step 5: Top with bocconcini and cook for a further 5 to 7 minutes or until base is slightly crisp.

  • Step 6: Put rocket, basil, parmesan and remaining tomato in a medium bowl and toss well to combine and serve rocket salad with pizza.
