Step 1: Preheat oven to 200C (fan forced).
Step 2: Line a small oven tray with baking paper and put pita pocket on tray.
Step 3: Spray a small non stick frying pan with cooking spray and heat over a medium heat and add chicken and cook for 3 minutes on each side or until almost cooked through and transfer to a plate, rest for a minute or two and then thinly slice on the diagonal.
Step 4: Combine tomato puree and basil and spread mixture over pita pocket and then sprinkle over chicken and prosciutto and then half the tomato and bake for 5 minutes.
Step 5: Top with bocconcini and cook for a further 5 to 7 minutes or until base is slightly crisp.
Step 6: Put rocket, basil, parmesan and remaining tomato in a medium bowl and toss well to combine and serve rocket salad with pizza.
