Ingredients

The ingredients are:
  • 2 tablespoons pine nuts
  • 50 grams bacon (streaky bacon, 2 rashers sliced)
  • 1 tablespoon olive oil
  • 1 garlic cloves, thinly sliced
  • Dried chilli flakes, pinch of
  • 1 lemon, whole (rind finely grated)
  • 1/2 cup breadcrumbs (day-old sourdough breadcrumbs, or panko crumbs)
  • 170 to 200 grams broccolini (2 bunches, stems halved lengthwise

How to Make

  • Step 1: Dry-fry pine nuts and bacon in a heavy based pan over medium heat for 2 minutes or until nuts are golden and bacon is crisp and transfer to a bowl.

  • Step 2: Heat 1/2 tablespoon of oil in a pan and add garlic, chilli, rind and breadcrumbs and cook, stirring for 3 minutes or until golden and then transfer to a bowl.

  • Step 3: Heat remaining oil in pan over high heat and add broccolini, cover and cook shaking pan frequently, for about 5 minutes or until broccolini is lightly charred and crisp tender.

  • Step 4: Season with salt and transfer to a plate and serve topped with crumb mixture.
