Step 1: Preheat grill to high heat. Preheat a 12 inch cast iron skillet on grill for 15 minutes.
Step 2: In a bowl stir together the first six ingredients (all except for chicken) and rub the mixture under the skin and outside of a chicken. Place chicken skin side down in skillet. Place a second skillet or a foil-wrapped brick over the chicken.
Step 3: Cook covered for 20 minutes. Remove top skillet; turn chicken. Place skillet over the chicken and cook, covered until a meat thermometer registers 165 degrees F (20 minutes). Remove skillet from grill.
