  • 2 large garlic cloves, thinly sliced
  • 4 cups spinach leaves (baby)
  • 4 cups arugula leaves (baby)
  • 4 slices (4 ounces) bacon (center-cut, halved)
  • 8 Italian (8 ounces) bread slices
  • 2 ounces mozzarella cheese, shredded
  • 2 ounces fontina cheese, shredded

How to Make

  • Step 1: Heat a large skillet over medium-high heat. Add oil; swirl to coat. Add garlic to the pan; saute 1 minute.

  • Step 2: Add spinach and arugula; stir until wilted. Remove spinach mixture from the pan.

  • Step 3: Return pan to medium-high heat. Add bacon; cook until crisp. Remove bacon.

  • Step 4: Top 4 bread slices evenly with cheeses, bacon pieces, spinach mixture, and the remaining 4 bread slices.

  • Step 5: Heat the pan over medium heat. Add the swandwiches to the drippings in the pan; weigh down with a plate. Cook 2 minutes on each side.
