Ingredients

The ingredients are:
  • 1/3 cup fat-free mayonnaise (or reduced fat mayonnaise)
  • 2 teaspoons red curry paste (Thai)
  • 1 lime, whole (the finely grated peel of)
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • 16 to 20 ounces ground chicken
  • 1/2 cup peanuts (finely chopped dry-roasted)
  • 1/3 cup cilantro, chopped fresh
  • 3 tablespoons mint, chopped fresh
  • 2 teaspoons red curry paste (Thai)
  • 1 lime, whole (finely grated peel)
  • 1 tablespoon lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 hamburger (6 ounces) bread buns (split)
  • Lettuce leaves (4 leaves)
  • Onion slices (4 thin slices raw sweet onion, optional)

How to Make

  • Step 1: In small bowl, stir the first 5 ingredients with whisk. Cover; refrigerate until serving time.

  • Step 2: Heat gas or charcoal grill. In large bowl, mix all burger ingredients except buns and lettuce. Shape mixture into 4 patties, 1/2 inch thick.

  • Step 3: Carefully brush oil on grill rack. Place patties on grill over medium heat. Cover grill; cook 9 to 12 minutes, turning once, until meat thermometer inserted in center of patties reads 165°F.

  • Step 4: Place burgers on bottom halves of buns. Spread tops of burgers evenly with Red Curry Mayo. Top with lettuce and onion. Cover with top halves of buns.

  • NOTE: for people who can't stand the heat - reduce amount of Thai red curry paste in both mayonnaise and burgers!
