  • FOR SPOON BREAD
  • 2 cups milk
  • 1 cup cornmeal (yellow)
  • 2 tablespoons butter (or margarine, softened)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup milk
  • 3 large eggs (separated)
  • FOR MAPLE BUTTER
  • 1/2 cup butter (or margarine, softened)
  • 2 tablespoons maple syrup (or maple flavored syrup)
  • 1/4 teaspoon ground cinnamon

How to Make

  • TO MAKE THE SPOON BREAD

  • Step 1: Heat oven to 350-degrees Fahrenheit.

  • Step 2: In a 2-quart saucepan combine 2 cups milk and cornmeal. Cook over medium heat, stirring constantly, until all milk is absorbed and mixture is of cooked cereal consistently (8 - 11 minutes). Remove from heat.

  • Step 3: Add 2 tablespoons butter, baking powder, salt, and sugar; stir until well mixed and butter is melted.

  • Step 4: With wire whisk beat in milk and egg yolks until smooth. Transfer to a large bowl; set aside.

  • Step 5: In a small mixer bowl beat egg whites at high speed, scraping bowl often, until stiff peaks from (1 - 2 minutes).

  • Step 6: Fold into cornmeal mixture until uniform and no lumps are visible.

  • Step 7: Carefully pour into 2-quart greased casserole.

  • Step 8: Bake for 40 - 50 minutes or until golden brown and top springs back when touched lightly in center.

  • FOR THE MAPLE BUTTER

  • Step 9: In a small bowl stir together all maple butter ingredients; serve with warm spoon bread.
