Ingredients

The ingredients are:
  • 1/2 cup fat-free sour cream
  • 1/4 teaspoon black pepper
  • 3 garlic cloves, finely minced
  • 1 can (14 ounce) artichoke hearts (well-drained & chopped)
  • 1 package (10 ounce) frozen chopped spinach (thawed, well-drained & then squeezed dry)
  • 1 block (8 ounce) low-fat cream cheese, softened
  • 1 block (8 ounce) fat-free cream cheese, softened
  • 6 ounces part-skim mozzarella cheese (shredded & divided per Prep Steps - About 1 1/2 cups)
  • 1 ounce Parmesan cheese (grated & divided per Prep Steps - About 1/4 cup)

How to Make

  • Step 1: Preheat oven to 350F.

  • Step 2: Combine 1st 7 ingredients in a lrg bowl, stirring until well-blended. Add 4 oz (1 cup) mozzarella plus 2 tbsp Parmesan & stir well.

  • Step 3: Spoon mixture into a broiler-safe 1 1/2-quart glass or ceramic baking dish. Sprinkle with 1/2 cup mozzarella & 2 tbsp Parmesan. Bake for 30 min or until bubbly.

  • Step 4: Preheat broiler, leaving the dish in the oven while in progress. Broil 3 min or until cheese is lightly browned. Serve immediately w/dippers &/or breads of your choice.

  • NOTE: I usually allow generous time for ingredient prep, but not so much here. This is a 1-bowl prep w/the ingredients conveniently ready to combine, so it's your basic "dump & stir" method. Just don't be so quick about it that excess liquid still remains.
