Ingredients

The ingredients are:
  • 6 tablespoons olive oil
  • 2 tablespoons tarragon vinegar (plus 2 teaspoons)
  • 1 tablespoon tarragon
  • 1/2 tablespoon lemon juice
  • 1/2 tablespoon dijon mustard
  • 375 grams cooked chicken (cooked and diced, 3 cups)
  • 3 ounces dry orzo (dry 1/2 cup)
  • 10 ounces cherry tomatoes (1 cup)
  • 1 jar (6 ounce) marinated artichoke hearts (drained)
  • 1/2 cup chopped kalamata olives (pitted)
  • 1/3 cup currants
  • 1 1/2 tablespoons capers, drained

How to Make

  • Step 1: To make the dressing combine the first 5 ingredients (-mustard) in a bowl or jar; whisking to blend. Season to taste with salt and pepper.

  • Step 2: In a bowl place the chicken and mix in 1/4 cup of the dressing.

  • Step 3: Cook orzo in pot of boiling water according to package directions; drain and rinse under cold water; drain.

  • Step 4: Transfer orzo to a large salad bowl; stir in remainder of the dressing and toss. Add chicken mixture and rest of the ingredients (-capers). Toss. season with salt and pepper.
