  • 1/4 cup yellow onion, finely chopped
  • 2 to 3 garlic cloves, fine chopped
  • 93 grams dry rice (white long grain, 1/2 cup, dry)
  • 1 can Rotel (10 ounce) diced tomatoes (with green chiles, undrained)
  • 1/2 cup chicken broth (or water)
  • 1/2 teaspoon salt
  • Ground pepper, to taste
  • 1/3 cup sliced pimiento-stuffed green olives
  • 1/2 cup grated Jack cheese

How to Make

  • Step 1: In a oven-proof skillet with a lid, Heat the oil. Add garlic and onion and cook for 2 minutes. Add and mix all the remaining ingredients. Cover with a lid.

  • Step 2: Bake, covered, at 350 degrees F for 45 minutes. Uncover and stir and bake for 15 more minutes.
