Step 1: Boil water in a large pot. Add just 1 1/2 cups coconut milk and bring to a boil.
Step 2: Add the sweet potato and simmer for 6 minutes.
Step 3: Add the remaining coconut milk, sugar, and glutinous rice balls. Stir and bring to a boil, then simmer for 8 minutes.
Step 4: Add the plantain and cook for an additional 4 minutes.
Step 5: Next add the sliced jackfruit. Cook for 2 minutes more.
Step 6: Gently add the cooked Tapioca Pearls, then stir. Simmer for 1 minute and turn off heat .
Step 7: Serve hot or cold.
