  • 2 cups graham cracker crumbs
  • 1 cup powdered sugar (sifted)
  • 3/4 cup butter, melted
  • 8 ounces cream cheese (softened)
  • 2 cups granulated sugar (divided)
  • 1 teaspoon pure vanilla extract
  • 2 large eggs
  • 3 tablespoons cornstarch
  • 2 cups blueberries (fresh or frozen)
  • 2 tablespoons water
  • 1/4 to 1/2 teaspoon ground cinnamon (optional)
  • Frozen whipped dessert topping, thawed, or homemade whipped cream (optional)

How to Make

  • Step 1: Preheat oven to 350-degrees Fahrenheit.

  • Step 2: In a medium bowl combine graham cracker crumbs, powdered sugar and butter. Press mixture evenly onto bottom of a 9 x 13 x 2-inch baking pan; set aside.

  • Step 3: In a medium mixing bowl beat cream cheese, 1 cup sugar and vanilla extract until well combined.

  • Step 4: Add eggs, one at a time, beating until smooth after each. Pour over crust.

  • Step 5: Bake for about 20 minutes or until set in the center. Cool on wire rack.

  • Step 6: Meanwhile, in a medium saucepan combine cornstarch and remaining 1 cup granulated sugar.

  • Step 7: Add blueberries and water. Cook and stir over medium heat until thickened and bubbly; stir in the cinnamon (if using) and cook and stir 2 minutes more.

  • Step 8: Cover and cool without stirring. Spread over cheesecake layer.

  • Step 9: Cover and chill up to 24 hours.

  • Step 10: Cut into squares to serve. Top each serving with a spoonful of dessert topping, if desired.
