Ingredients

The ingredients are:
  • FOR JALAPENO SIMPLE SYRUP
  • 1 cup water
  • 1 cup granulated sugar
  • 1 jalapeno pepper (medium size, halved, seeded & deveined)
  • FOR THE MARGARITAS
  • 1 teaspoon Tajin seasoning (or other chile-lime seasoning)
  • 2 cups ice cubes
  • 331 grams frozen mango (2 cups cubed, can buy it that way or buy fresh to freeze)
  • 1/2 cup tequila
  • 1/4 cup Cointreau
  • 1/4 cup fresh lime juice
  • 6 tablespoons simple syrup (jalapeno simple syrup)
  • Lime slices as optional garnish

How to Make

  • FOR THE SIMPLE SYRUP

  • Step 1: Stir together the water, sugar & jalapeno in a sml saucepan. Bring to a boil, cook for 1 min over med-heat & remove from stove. Let stand for at least 1 hr & cool completely before using for this recipe. (If you make ahead, you can chill in the refrigerator for several dys. You may also want to pour thru a sieve if any pieces of the jalapeno have separated)

  • FOR THE MARGARITAS

  • Step 2: On a small plate, sprinkle Tajin seasoning. Dip the rim of each glass in water or lime juice & dip in seasoning to line the rim of the glass.

  • Step 3: Process the ice, mango, tequila, Cointreau, lime juice & simple syrup in a blender until smooth. Add more simple syrup after a taste test if you would prefer more sweetness or jalapeno flavor.

  • Step 4: Pour mango mixture into the glasses & serve immediately.

  • NOTE #1 - Tajin Seasoning is available pretty much everywhere, is usually found in the produce aisle & also often seen at Costco.

  • NOTE #2 - You will have leftover simple syrup that you can use to make more margaritas or it can be saved in your fridge for up to 2 wks. This leftover syrup does askew the nutritional info per serving when the recipe is considered as a whole.
