Step 1: Stir together the water, sugar & jalapeno in a sml saucepan. Bring to a boil, cook for 1 min over med-heat & remove from stove. Let stand for at least 1 hr & cool completely before using for this recipe. (If you make ahead, you can chill in the refrigerator for several dys. You may also want to pour thru a sieve if any pieces of the jalapeno have separated)
Step 2: On a small plate, sprinkle Tajin seasoning. Dip the rim of each glass in water or lime juice & dip in seasoning to line the rim of the glass.
Step 3: Process the ice, mango, tequila, Cointreau, lime juice & simple syrup in a blender until smooth. Add more simple syrup after a taste test if you would prefer more sweetness or jalapeno flavor.
Step 4: Pour mango mixture into the glasses & serve immediately.
