The ingredients are:
  • 1 large egg
  • 1 cup banana, mashed (about 2 bananas)
  • 1/3 cup whole milk
  • 1/2 cup oil (vegetable)
  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar (white)
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon allspice
  • 1/4 teaspoon ginger
  • 1/2 teaspoon ground cinnamon
  • 8 ounces semi-sweet chocolate chips (1 cup)
  • 1/2 cup pecans, chopped (toasted, or walnuts, toasted)

How to Make

  • Step 1: Line muffin tray with 12 paper muffin cups.

  • Step 2: Beat egg in a large bowl. Stir in milk, oil and mashed banana.

  • Step 3: In a small bowl, stir together the flour with sugar and next 6 dry spices. Combine the wet with dry ingredients just until combined (don't over mix!). Gently fold in the chocolate chips & pecans. Spoon into muffin cups.

  • Step 4: Bake for about 20 minutes in a preheated 400F oven. Immediately remove from pan.
