Step 1: In a heat proof bowl, combine lemon Jell-O gelatin powder with 2 cups boiling water, stirring until granules has dissolved. Mix in 1 1/2 cups iced water. Let partially set.
Step 2: Prepare pie filling according to package directions and let cool. Cover with plastic wrap until cool to avoid "skin" forming on top layer.
Step 3: After the gelatin is partially set AND the pie filling mixture has cooled, using a large spoon, mix together with the Cool Whip with the cooled pie filling until totally combined.
Step 4: In a large bowl, mix everything together until completely combined. Let set in the fridge.
Step 5: Spoon from bowl or transfer to a prepared crumb crust.
Step 6: Top with whipping cream and garnish with fresh lemon slices.
