Ingredients

The ingredients are:
  • 1 cup granulated sugar
  • 1/4 cup apple cider vinegar
  • 1/2 pound peaches (peeled, pitted and diced, 2 peaches)
  • 1 whole (3 pound) cantaloupe (peeled, halved, and seeded and cut into 1/2 inch thick slices)
  • 1/4 cup olive oil
  • 2 cups blueberries (1 pint)
  • Kosher salt
  • Pepper
  • 1/4 cup basil, torn (garnish)

How to Make

  • Step 1: In a saucepan over medium heat add the sugar, vinegar and peaches and bring them to a simmer; cook until peaches are softened and liquid is reduced by half (10-15 minutes). Set aside.

  • Step 2: Heat grill to medium.

  • Step 3: Toss cantaloupe with oil.

  • Step 4: Grill cantaloupe, in batches, turning once until charred on all sides (10-15 minutes). Transfer to serving platter with the blueberries; drizzle with the peach mixture; season with salt and pepper and garnish with basil.
