  • 2 packages (16 ounce) cassava, grated
  • 1/4 cup butter, melted
  • 1é2 cup sweetened condensed milk
  • 1/2 cup evaporated milk
  • 6 tablespoons cheddar cheese, grated
  • 14 tablespoons granulated sugar
  • 2 large eggs
  • 1 egg white (only)
  • 470 grams coconut milk (2 cups)
  • FOR TOPPING INGREDIENTS
  • 2 tablespoons all-purpose flour
  • 2 tablespoons granulated sugar
  • 1/2 cup sweetened condensed milk
  • 2 tablespoons cheddar cheese, grated
  • 470 grams coconut milk (2 cups)

How to Make

  • For the Cake:

  • Step 1: Pre -heat oven for 350 F.

  • Step 2: In a mixing bowl, combine the grated cassava, butter, ½ cup condensed milk, ½ cup evaporated milk, 6 tablespoons cheddar cheese, 14 tablespoons sugar, and 2 eggs. Mix thoroughly.

  • Step 3: Add the 2 cups coconut milk, and stir to combine.

  • Step 4: Pour into a greased baking dish and bake for 60 minutes. Remove from oven and put aside.

  • Step 5: While the cake is baking, prepare the topping by combining 2 tablespoons sugar and flour in a heated saucepan. Add 1/2 cup condensed milk and mix thoroughly.

  • Step 6: Add 2 tablespoons cheddar cheese while stirring constantly.

  • Step 7: Pour 2 cups of coconut milk and stir constantly for 10 minutes

  • Step 8: Pour the topping over the Cassava Cake and spread evenly.

  • Step 9: Briefly whisk the egg white in a small bowl. Then glaze the topping with the egg white using a basting brush. Simply dip the brush to the egg white and brush it on the cassava cake.

  • Step 10: Set your oven to broil. Broil the Cassava cake until lightly browned.
