Step 1: Heat oil in a pan. Add the garlic. Cook until the color turns golden brown. Remove the garlic and set aside.
Step 2: Add pork and chicken to the pan. Saute for 5 minutes or until the color turns light brown.
Step 3: Add peppercorns, bay leaves, oyster sauce, soy sauce, and water. Bring to a boil and simmer until the meat is tender.
Step 4: Add the sugar and stir to combine. Add the vinegar, stir, and return to a boil. Simmer until most of the liquid evaporates.
Step 5: Taste and add salt or a bit more soy sauce if necessary. Add the fried garlic, stir, and cook for 2 more minutes.
