Ingredients

The ingredients are:
  • 389 grams cooked brown rice (cooked 2 cups, I like boil-in-bag rice)
  • 1 can (10 ounce) condensed cream of mushroom soup
  • 1 1/2 cup shredded Monterey Jack cheese
  • 4 ounces yellow onion, diced (1/2 med onion)
  • 1/4 cup milk
  • 200 grams fresh broccoli (2 to 3 cups, or frozen)
  • 1/8 teaspoon celery seed
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon Italian seasoning
  • FOR TOPPING
  • 1/4 cup parmesan cheese, shredded (or Monterey Jack)
  • 1/3 cup bread crumbs

How to Make

  • Step 1: Preheat the oven to 400F

  • Step 2: Boil or steam the broccoli until tender (8-10 minutes) and include the onion if you like. Drain.

  • Step 3: Grease a casserole dish (9" x 9") and stir soup, milk and cheese in the dish, and place in microwave until cheese is melted.

  • Step 4: Combine all ingredients in the casserole dish except the topping ingredients and smooth.

  • Step 5: Combine the bread crumbs and cheese and spread on top.

  • Step 6: Bake for 30 minutes or until bubbly and browned.

  • Step 7: Cool 10 minutes before serving.
