Ingredients

The ingredients are:
  • 1/2 pound fresh spinach (washed, stemmed, dried and torn into bite-size pieces)
  • 1/4 pound cucumber, sliced (1/2 cucumber)
  • 1/2 cup radishes, sliced
  • 1/4 cup green onions, sliced
  • 2 large eggs (hard-boiled, and sliced)
  • 3/4 to 1 cup salad dressing (bleu cheese dressing)
  • 5 ounces sliced bacon (5 slices, cooked crisp and crumbled)
  • 72 grams peanuts (1/2 cup, salted)

How to Make

  • Step 1: In a shallow salad bowl arrange the spinach. Layer with cumbers, then the radishes, onion and egg. Spread the dressing over the top. Cover and chill overnight.

  • Step 2: Before serving, sprinkle with bacon and peanuts.

  • Step 3: To serve, list out portions with salad spoon and fork being careful to pick up all layers.
