Step 1: Heat the sugar in a small frying pan. When melted, add the bananas & caramelize them on each side for 3-4 min. Lift out & set aside.
Step 2: Add the coconut milk to the pan w/a pinch of salt, stir it into the sugar & allow it to bubble until syrupy. Divide between 2 bowls & top w/the caramelized bananas. Then add 1 scoop of coconut or vanilla ice cream plus 1/2 tablespoon toasted coconut to each serving.
