Ingredients

The ingredients are:
  • 2 tablespoons light brown sugar (soft)
  • 2 bananas (peeled, halved lengthways & then each chunk halved again)
  • 5 ounces coconut milk (150 ml)
  • 2/3 cup ice cream (2 scoops coconut, or vanilla ice cream)
  • 1 tablespoon shredded coconut (toasted, divided per Prep Step 2)

How to Make

  • Step 1: Heat the sugar in a small frying pan. When melted, add the bananas & caramelize them on each side for 3-4 min. Lift out & set aside.

  • Step 2: Add the coconut milk to the pan w/a pinch of salt, stir it into the sugar & allow it to bubble until syrupy. Divide between 2 bowls & top w/the caramelized bananas. Then add 1 scoop of coconut or vanilla ice cream plus 1/2 tablespoon toasted coconut to each serving.
