Step 1: Glaze ... Add the preserves, orange juice, wine, vinegar, and mustard to a small pot; and, bring to a light boil. Reduce to low heat and simmer 5 minutes. Turn off the heat, add the orange zest; and, season with salt and pepper to taste.
Step 2: Cool completely, then refrigerate. Use immediately; or, put in a mason jar, tupperware container, etc; and store up to 10 days.
Step 3: Serve and ENJOY! ... As I said, I love to use this on cornish hens (RecipeZazz Recipe#24274); but, it is great on so many other cuts of meat - chicken, pork, and lamb.
