Ingredients

The ingredients are:
  • 4 1/2 pounds chicken wings (about 30)
  • 1/2 cup honey
  • 1 lime, juice of
  • 3 tablespoons chipotle chile sauce (canned, refer to NOTE below)
  • 3 tablespoons bourbon
  • 1 tablespoon ancho chile powder
  • 1 tablespoon salt

How to Make

  • Step 1: Preheat oven to 400-degrees F. Line a baking sheet with parchment paper.

  • Step 2: Cut the tip off each chicken wing and discard. Rinse the wings and pat dry.

  • Step 3: In a large bowl, stir the remaining ingredients together well.

  • Step 4: Add the chicken wings and stir until well combined. With your fingers, make sure that every wing is uniformly coated.

  • Step 5: Marinate in the refrigerator overnight (the marinading time maybe skipped and placed in over right away according to the next step.) If marinating overnight, let the wings come to room temperature before placing them in the oven.

  • Step 6: Arrange the chicken wings in one layer on the baking sheet and roast for about 45 minutes. Serve hot or within 2 hours of finishing. If holding, cover wings with foil.

  • NOTE: Chipotle chile sauce is ground-up chipotles in its own sauce and it is not so easily found in your local supermarkets. Normally chipotle chiles come whole in a can with sauce. If chipotle chile sauce is not available in your markets, finely chop up whole chipotles and mush with fork or place in a mini food processor. Add some of the sauce in the can to complete the process.
