Step 1: Mince peppers and salt in bowl of food processor fitted with metal blade.
Step 2: Combine minced peppers with paprika, garlic, white wine and red wine in large bowl. Add pork pieces, turning to coat well. Cover with plastic wrap and refrigerate 24 hours.
Step 3: Remove pork from marinade. Pour oil in large roasting pan, add pork, season with salt and pepper and roast at 375 degrees 1 hour. Turn pork often to keep moist. Reduce heat to 325 degrees and cook until pork is nicely browned, another 15 to 20 minutes.
