  • Star anise (2 pieces)
  • 1 garlic clove, smashed and peeled
  • 3 tablespoons honey
  • 2 tablespoons hot sauce (Sriracha hot sauce)
  • 2 pounds pork loin chops (to equal about 2 lbs, 6 center-cut, rib)

How to Make

  • TO MAKE THE MARINADE

  • Step 1: Combine all the ingredients in a bowl or baking dish large enough to hold the pork chops in a single layer.

  • Step 2: Add the chops to the marinade, turning to coat well, and marinate for 1 hour at room temperature or longer if storing in the refrigerator.

  • Step 3: Prepare a medium-hot fire in a grill or preheat a ridged grill pan over medium heat.

  • Step 4: Remove the pork from the marinade and pat dry with paper towels.

  • Step 5: Grill the pork, turning once, until just cooked through, 12 -15 minutes; the internal temperature should reach 150-degrees on an instant-read thermometer.

  • Step 6: Let the pork rest for 5 minutes before serving.
