Ingredients

The ingredients are:
  • 2 garlic cloves, thinly sliced
  • 10 grams anchovy fillets (2 fillets, finely chopped)
  • Red chilli pepper (1/2 long chilli, seeded and finely chopped)
  • 250 grams grape tomatoes (or small cherry tomatoes, halved)
  • 100 grams green olives (Sicilian green olives)
  • 80ml dry white wine (1/3 cup)
  • 125 ml olive oil (extra virgin, plus extra, to serve, 1/2 cup)
  • 500 grams dry pasta (bucatini or thin spaghetti)
  • 600 grams clams (soaked in cold water for 15 minutes)
  • 400 grams snapper fish fillets (skinned, pin-boned, cut into 5cm pieces)
  • Basil or flat-leaf parsley, to serve

How to Make

  • Step 1: Preheat oven to 200C.

  • Step 2: Combine garlic, anchovies, chilli, tomatoes, olives, wine and oil in a large bowl and set aside to allow the flavours to develop.

  • Step 3: Meanwhile, cook pasta in a large saucepan of boiling water for half the cooking time given on the packet (it will be cooked through when baked), drain and then refresh under cold water and then add to tomato mixture and toss to coat.

  • Step 4: Cut 8, 30cm x 40cm sheets of baking paper.

  • Step 5: Place one sheet horizontally in a large shallow bowl, then place a second sheet vertically over the top.

  • Step 6: Spoon a quarter of the pasta mixture in the centre, then tuck a quarter each of the clams and fish into the pasta.

  • Step 7: Gather the paper edges together and tie with string to form a tightly closed bag, then transfer to an oven tray and then repeat with remaining baking paper, pasta mixture and seafood.

  • Step 8: Bake bags on the lowest shelf in the oven for 25 minutes or until clams open and fish is just cooked (untie one bag to check; re-tie and return to oven if not cooked).

  • Step 9: Place on plates and open the bags and drizzle seafood mixture with extra oil and scatter with basil to serve.
