Ingredients

The ingredients are:
  • 8 ounces dry spiral pasta (tri color)
  • 240 grams cherry tomatoes (1 cup, or grape tomatoes, sliced in half)
  • 3 ounces red bell pepper (1/2 of a small sweet red pepper, cut into small dice)
  • 3 ounces green bell pepper (1/2 of a small green pepper, cut into small dice)
  • 4 ounces crumbled feta cheese
  • 1/2 cup kalamata olives, sliced (sliced in half)
  • FOR DRESSING
  • 2/3 cup olive oil
  • 2 tablespoons minced fresh basil(I use a fresh lemon basil)
  • 3 tablespoons white vinegar
  • 2 tablespoons chopped green onions
  • 2 tablespoons grated parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon dried oregano

How to Make

  • Step 1: Cook the pasta according to package direction's rinse in cold water and drain. Place in a large serving bowl; add the tomato, peppers, feta cheese and olives.

  • Step 2: In a blender, combine the dressing ingredients; cover and process until smooth. Pour over salad; toss to coat. Cover and refrigerate for 2 hours or overnight (the longer the more flavorful the pasta will be)1. Toss before serving.
