  • The following recipe serves 12 people.

Ingredients

The ingredients are:
  • 6 cups rhubarb, chopped (fresh or frozen, - See NOTE #1 in the Prep Steps)
  • 1 1/2 cups granulated sugar
  • 5 tablespoons tapioca (quick-cooking)
  • 1 can (11 ounces) mandarin oranges (drained)
  • 1 cup brown sugar, packed
  • 1 cup oats (quick-cooking)
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup butter (cold & cubed)

How to Make

  • Step 1: In a lrg bowl, toss the rhubarb, sugar & tapioca. Let stand for 15 min, stirring occ.

  • Step 2: Pour into a greased 13x9 in baking pan & scatter the Mandarin oranges over the top of the rhubarb mixture.

  • Step 3: In a lrg bowl, combine the brown sugar, oats, flour & salt. Cut in the butter until the mixture resembles coarse crumbs & sprinkle evenly over oranges.

  • Step 4: Bake at 350F for 40 min or until top is golden brown. Serve w/ice cream as desired.

  • NOTE #1 - "If using frozen rhubarb, measure rhubarb while still frozen. Then thaw completely & drain in a colander, but do not press liquid out

  • NOTE #2 - Prep time was shown as "20 min plus standing time". While you clearly will not want to eat this straight from the oven, warm would be best IMO so keep this in mind as you prepare to serve - OR - You can rely on your handy microwave. :-)
