The ingredients are:
  • 1 pound pork loin (cut for stir-fry)
  • 1 tablespoon oil
  • 3/4 teaspoon pepper flakes
  • 8 ounces sugar snap peas
  • 1 cup red bell pepper, sliced
  • 1/8 cup granulated sugar
  • 1/3 cup sugar-free marmalade ("no sugar added" orange marmalade)
  • 1/4 cup teriyaki sauce
  • 2 large cloves garlic, chopped
  • 1 cup mango, chopped (fresh)
  • 1/4 cup cashew nuts (coarsley chopped, optional)

How to Make

  • Step 1: Heat oil in large skillet or wok.

  • Step 2: Add pork and pepper flakes cook until lightly browned 5 min.

  • Step 3: Add peas, garlic, stir fry 2 minutes.

  • Step 4: Add marmalade and teriaki sauce, heat through.

  • Step 5: Add peppers and mango. Stir fry for 5 minutes. The peppers should still be crisp.

  • Step 6: Serve over pasta or rice.
