Ingredients

The ingredients are:
  • 1 1/2 pound eggplant (1 large, unpeeled, cut into 3/4" slices, 6 slices)
  • 4 tablespoons salad dressing (Italian dressing)
  • 1 1/2 cup salsa (medium)
  • 3/4 cup feta cheese, crumbled
  • 1 teaspoon garlic powder
  • 1/4 cup fresh basil, thinly sliced

How to Make

  • Step 1: Preheat oven 375F.

  • Step 2: Place eggplant slices on a parchment lined baking sheet.

  • Step 3: Paint both side the Italian Dressing

  • Step 4: Bake 25 minutes.

  • Step 5: Top slices with salsa.

  • Step 6: Sprinkle on cheese.

  • Step 7: Place in 375 oven for 10 minutes or until the cheese is nicely browned.

  • Step 8: Sprinkle on basil & serve.
