The ingredients are:
  • 1 package (12 ounce) dry penne rigate
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 can (15 ounce) red kidney beans (rinsed and drained)
  • 1 teaspoon dried basil
  • 1 teaspoon dried chives
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup Parmesan cheese, grated
  • 3 ounces fresh spinach (torn, 1 1/2 cups)

How to Make

  • Step 1: Prepare pasta according to package directions. Drain and set aside.

  • Step 2: In a large skillet, saute the bell peppers and garlic in the olive oil. Stir in beans and cooked pasta. Add basil, chives, salt and pepper; mix well.

  • Step 3: Remove from heat and stir in the cheese. Add spinach and toss to coat.

  • Step 4: Serve warm. Refrigerate any leftovers.
