Ingredients

The ingredients are:
  • 1 tablespoon oil (vegetable oil)
  • 1 brown onion, finely chopped
  • 350 grams sweet potato (peeled and cut into 2cm pieces)
  • 1/4 cup yellow curry paste (or red, 75 grams)
  • 1 can (400 ml) coconut milk
  • 1 tablespoon fish sauce
  • 250 grams cherry tomatoes (halved)
  • 700 grams snapper fish (firm white fish fillets cut into 4cm pieces)
  • 400 grams shrimp (16 green prawns, peeled leaving tails intact and deveined)
  • 2 tablespoon lime juice
  • Lime wedges, to serve
  • 1/2 cup coriander leaves

How to Make

  • Step 1: Heat oil in a large saucepan or wok over medium-high heat and add the onion and sweet potato and cook, stirring for 5 minutes or until onion softens.

  • Step 2: Add the curry paste and cook, stirring, for 1 minutes or until fragrant and then add the coconut milk, fish sauce, tomato and fish and bring to the boil and then reduce heat to medium-low and cook uncovered, for 8 to 10 minutes and then add the prawns and cook for 5 minutes or until fish is cooked through and then stir in the lime juice.

  • Step 3: Taste and season with more lime juice and fish sauce, if desired.

  • Step 4: Sprinkle the curry with the coriander leaves and serve with lime wedges.
