Ingredients

The ingredients are:
  • 500 grams ground pork (pork mince)
  • 1 cup breadcrumbs (fresh, soft)
  • 1 large egg (lightly whisked)
  • 1 yellow onion, chopped
  • 1 carrot, chopped
  • 1 ounce celery, chopped (1/2 celery stalk, chopped)
  • 2 cloves garlic, chopped
  • 1 large apple (peeled, cored and finely chopped)
  • 2 tablespoons sage, chopped
  • 1 tablespoon Dijon mustard (plus extra to serve)
  • 200 grams bacon (streaky bacon, 8 rashers)
  • 1 tablespoon honey
  • Gherkins, to serve

How to Make

  • Step 1: Preheat oven to 180C/160C fan forced.

  • Step 2: Line a 19cm x 9cm (base measurement) loaf pan with baking paper, extending paper at long sides for handles.

  • Step 3: Combine mince, breadcrumbs and egg in a large bowl.

  • Step 4: Process onion, carrot, celery and garlic in a food processor until finely chopped.

  • Step 5: Using hands squeeze excess liquid from vegetable mixture and then add to mince mixture with the apple, sage and mustard season and mix well.

  • Step 6: Put mix into prepared pan and top with bacon, tucking ends of rashers into sides of pan to completely cover surface.

  • Step 7: Bake for 1 hour, brushing occasionally with honey during during he last 10 minutes of cooking.

  • Step 8: Serve with extra mustard and gherkins.
