Ingredients

The ingredients are:
  • 1 tablespoon butter
  • 100 grams mushrooms (sliced, I used baby portabellas)
  • 1/2 cup baby spinach (loosely packed)
  • 15 grams feta cheese (crumbled)
  • 2 slices (45 grams) sour dough bread (toasted and buttered, thick slices)
  • Salt and pepper

How to Make

  • Step 1: Melt butter in fry pan till frothy and put in mushrooms and cook till slightly coloured, about 5 minutes and then put in baby spinach and cook till wilted. about 30 seconds.

  • Step 2: Serve over slices of sour dough and season with salt and pepper to your taste and then scatter crumbled fetta on top.
