The ingredients are:
  • 2 cups cooked rice
  • 2 bell peppers, chopped
  • 2 yellow onions, chopped
  • 4 ounces sliced bacon (4 strips, fried crisp)
  • 1 can (15 ounce) diced tomatoes
  • 1 cup ketchup
  • 1/2 teaspoon hot sauce (Tabasco sauce)
  • 2 tablespoons Parmesan Cheese
  • 1 teaspoon salt
  • 1/2 teaspoon pepper, to taste

How to Make

  • Step 1: Fry bacon, remove and place on paper towel.

  • Step 2: Brown onion and bell pepper in drippings.

  • Step 3: Add tomatoes, ketchup, Tabasco and crumbled bacon.

  • Step 4: Pour in greased casserole, sprinkle top with Parmesan cheese and bake at 325 degrees for 30 minutes or until rice is dry enough to separate.
