  • 1 1/4 pounds grapefruit (2 pink or red, peeled, seeded, and sectioned)
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 cup crystallized ginger, finely chopped
  • 1/4 cup sweetened shredded coconut
  • 1/8 teaspoon salt
  • 4 tablespoons butter (cold, cut up)
  • 78 grams unsweetened coconut milk (light, 1/3 cup)
  • 1 large egg (lightly beaten)

How to Make

  • Step 1: Preheat oven to 400 degrees. Grease a 2-quart square baking dish with butter; set aside. In a medium saucepan over low heat, stir together honey, cornstarch, vanilla extract, and ground ginger until well combined.

  • Step 2: Gently stir in the orange and grapefruit sections. Keep the filling hot while preparing the cobbler dough.

  • Step 3: In the bowl of a food processor, pulse the flour, baking powder, crystallized ginger, coconut, and salt until combined. Add the butter, coconut milk, and egg, and pulse just until combined. Add an additional tablespoon of coconut milk if necessary for dough to come together.

  • Step 4: Spoon hot filling into the prepared baking dish. Drop topping in nine mounds on top of the hot fruit filling.

  • Step 5: Bake 20-25 min. or until a wooden toothpick inserted in the topping comes out clean. Serve warm.
