Step 1: Heat up frypan over a medium heat and add the oil and then fry off the garlic and the chilli till fragrant and then add the wine and the coconut milk and bring to the boil.
Step 2: Add the mussels and cover, after a few minutes begin removing the mussels as they open and discard any that don't.
Step 3: Bring the milk mix to a boil and reduce by half and then lower to a simmer and add the mussels back in and warm through.
Step 4: Put into serving bowl and enjoy and you wish with some crusty bread.
