  • FOR BATTER
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 2 tablespoons butter
  • 2 teaspoons baking powder
  • Salt
  • 1/2 cup milk
  • 1 cup all-purpose flour
  • FOR FILLING
  • 1 cup granulated sugar
  • 7 ounces rhubarb (fresh, diced, 2 cups)
  • 1 tablespoon butter
  • 2 cups water (boiling)

How to Make

  • FOR THE BATTER

  • Step 1: Mix all together and pour into greased 8x10.

  • FOR THE FILLING

  • Step 2: Mix everything but boiling water. Pour into batter. Cover with boiling water.

  • Step 3: Bake 325 degrees.

  • Step 4: No baking time is given so I'm guessing 25 minutes or until done.
