Step 1: Preheat your oven to 425º.
Step 2: In a large bowl, whisk together the mustard with olive oil, then mix in the next six dry spices.
Step 3: Add in the cubed potatoes, using your hands, mix to coat all the potatoes really well.
Step 4: Place on one or two baking sheets sprayed with cooking spray, keeping the potatoes in a single layer.
Step 5: Bake in the oven for 20-22 minutes. Remove from the oven and turn the potatoes over.
Step 6: Place back in the oven another 20-25 minutes until the potatoes are really crispy and brown.
