Step 1: Put bacon in a skillet and cook over medium low heat for 35-40 minutes or until bacon is still pink but not crisp and fat is rendered.
Step 2: While bacon is cooking put the potatoes into a medium pot with 2 pinches of salt; cover with cold water and boil over medium high heat for 10-15 minutes; drain and add to skillet with bacon. Add garlic and salt and pepper and cook for another 5 minutes.
