  • 1 cup baby spinach, chopped
  • 6 baking potatoes, peeled and cubed
  • 2 cloves garlic, peeled
  • 2 sprigs rosemary, fresh
  • 3/4 cup chicken broth, heated
  • 2 tablespoons butter
  • 1/2 cup roasted red peppers, diced

How to Make

  • Step 1: Place spinach in colander.

  • Step 2: In pot, bring next 3 ingredients and enough salted water to cover, to a boil.

  • Step 3: Cook 20 minutes; pour over spinach to drain.

  • Step 4: Discard rosemary.

  • Step 5: Return potatoes and spinach to pot and stir in butter and broth.

  • Step 6: Using hand masher, mash mixture until smooth.

  • Step 7: Stir in peppers and serve.
