Ingredients

The ingredients are:
  • 1 can (15 ounce) black beans (rinsed and drained)
  • 1 can (15 ounce) hominy (rinsed and drained)
  • 1 cucumber, peeled and diced
  • 150 grams grape tomatoes (1 cup, halved)
  • 1/2 cup yellow bell pepper, diced
  • 1/2 cup red onion, diced
  • 1/3 cup cilantro, chopped (fresh)
  • 1 jalapeño pepper (seeded, minced)
  • FOR DRESSING
  • 4 tablespoons fresh lime juice
  • 1 teaspoon honey
  • 2 teaspoon olive oil (extra virgin)
  • Ground cumin, dash (they said 1/4 t but I have found that is to much for many people so do for your taste)
  • 1/4 teaspoon salt
  • Black pepper, dash
