Ingredients

The ingredients are:
  • 1 cup mango,diced (peeled, ripe mango)
  • 4 ounces Greek yogurt (1/2 cup)
  • 1 1/2 teaspoons hot sauce (Sriracha sauce)
  • 4 tablespoons olive oil (lite olive, oil for frying)
  • 1 pound salmon (fresh, ground)
  • 1 cup panko bread crumbs
  • 1 large egg (lightly beaten)
  • 4 tablespoon fresh parsley, chopped
  • 3 tablespoons red onion, chopped
  • 1/2 teaspoon cayenne pepper (or more to taste)
  • Salt & pepper to taste

How to Make

  • Step 1: Mix together the mango, yogurt & sriracha sauce..Cover & refrigerate.

  • Step 2: Mix together the salmon, panko, egg, parsley, onion, cayenne, salt & pepper.

  • Step 3: Form into 4 patties.

  • Step 4: Heat oil in a skillet.

  • Step 5: Add patties and fry over medium high heat.

  • Step 6: Flip the patties after apprx 4-5 minutes (they should be golden).

  • Step 7: Continue frying until done, apprx another 4-5 minutes.

  • Step 8: Serve with the Mango Sriracha sauce.
