Ingredients

The ingredients are:
  • FOR WHITE SAUCE
  • 3/4 cup butter
  • 1/4 cup all-purpose flour
  • 3/4 cup water
  • 1/2 cup yellow onion, chopped
  • 1 cup cream (plus 2 tablespoons, 1 1/8 cup)
  • FOR CHICKEN
  • 5 pound whole chicken (cut up)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons garlic, crushed
  • 1 1/2 cups sliced mushrooms (button mushroom)
  • 1 cup red bell pepper, chopped (cut into cubes)
  • 1 cup green bell pepper, chopped (cut into cubes)
  • 1/2 cup sliced green olives (pitted and sliced crosswise)
  • 1/2 cup parsley, chopped (fresh)
  • 3 cups spaghetti sauce

How to Make

  • FOR THE WHITE SAUCE

  • Step 1: Heat half of butter. Add flour. Cook over low heat while stirring until light brown.

  • Step 2: Gradually add water, stirring until smooth.

  • Step 3: Add onion and all purpose cream. Blend well. Set aside.

  • FOR THE CHICKEN

  • Step 4: Season chicken with salt and pepper.

  • Step 5: Saute garlic and mushrooms in remaining butter. Add chicken. Cook until slightly browned.

  • Step 6: Add bell peppers, olives, spaghetti sauce and salt to taste. Bring to boil and simmer for 20 minutes.

  • Step 7: Add white sauce. Stir once.

  • Step 8: Sprinkle with parsley.
