Step 1: Heat oil in a large saucepan over medium heat and cook the shallot and garlic for 5 minutes or until soft and then add the cream and bring to the boil.
Step 2: Add mussels and cook, covered, for 5 minutes or until mussels open.
Step 3: Use a slotted spoon to transfer the mussels to a dish.
Step 4: Simmer the sauce for a further 5 minutes or until thickened and then stir in herbs and season with pepper.
Step 5: Return mussels to the sauce and cook for 1 minute or until heated through.
Step 6: Serve with chips, salad and crusty bread if having.
