Ingredients

The ingredients are:
  • 450 grams sausage (chipolata sausages)
  • 1 yellow onion, finely chopped
  • 1 carrot, finely chopped
  • 2 teaspoons curry spice (mix)
  • 1 1/2 cups water (plus 2 tablespoon extra)
  • 1 cup green peas (frozen)
  • 60 grams rocket leaves
  • 2 tablespoons coriander, chopped (cilantro)
  • 600 grams potatoes (floury such as coliban, cut into 2cm pieces)
  • 1 ounce sour cream (2 tablespoons)

How to Make

  • Step 1: Heat a large frying pan over moderate heat and cook chipolatas for 5 minutes or until cooked through and transfer to a chopping boards, cool slightly and cut in half lengthwise.

  • Step 2: Add onion and carrot to pan and cook for 2 minutes or until soft and then add the spice mix and cook for 30 seconds or until fragrant and then add the water and bring to the boil and then reduce heat and simmer for 5 minutes or until reduced slightly.

  • Step 3: Return sausages to pan with peas and cook for 3 minutes or until heated and through and then remove from the heat and stir in half the rocket and the coriander and season with salt and pepper to taste.

  • Step 4: Meanwhile place potato and the extra water in a microwave safe bowl and microwave covered on high (100%) for 8 minutes or until tender and then stand for 1 minute and then add butter and sour cream and mash until smooth and season with salt and pepper to taste.

  • Step 5: Serve mashed potato topped with the sasage mixture and remaining rocket.
