Ingredients

The ingredients are:
  • 2 tablespoons olive oil
  • 1 cup white onion, chopped
  • 2 1/2 cups carrots, sliced (about 1 lb, peeled)
  • 1 cup dry white wine
  • 1/2 cup raisins (golden raisins)
  • 1/2 teaspoon Herbs de Provence
  • 1/2 teaspoon parsley, minced
  • 1 tablespoon brown sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon white pepper (to taste)

How to Make

  • Step 1: In a large deep skillet. drizzle 2 tablespoons olive oil.

  • Step 2: Add onions and carrots, once skillet is hot and allow to cook, stirring occasionally, until onions are translucent.

  • Step 3: Add herbs and just toast lightly.

  • Step 4: Add the wine, bring mixture to a boil,.turn down to a simmer,.and cook, stirring occasionally,.until the liquid has reduced by half.

  • Step 5: Add the raisins and simmer for about 5-10 more minutes until another 1/4th of the liquid has reduced.

  • Step 6: Add brown sugar cook 5 more minutes.
