  • 15 ounces carrots (5 carrots, shredded)
  • 1 red onion (shaved, chopped)
  • 3 tablespoons olive oil
  • 1/4 teaspoon pepper
  • 1 cup barbecue sauce (vegan if you wish)
  • 6 ounces bread buns (4 hamburger buns, toasted)

How to Make

  • Step 1: Put veggies on a baking pan on top of parchment paper, drizzle olive oil on them,

  • Step 2: Toss to coat, spread them out evenly in the pan, grind some black pepper on top, cover the pan with foil, and roast for approximately thirty minutes.

  • Step 3: Make sure you shake the carrots and onions in the pan every ten minutes so they roast evenly.

  • Step 4: Pour on bbq sauce and cook uncovered 5 minutes until sauce is bubbly.
