Step 1: Preheat oven to 350 degrees F.
Step 2: Line two baking sheets with parchment paper
Step 3: In a saucepan over low heat add 2 cups of chocolate chips with the butter, stirring until melted and smooth and then let it cool for 10 minutes.
Step 4: In a large bowl beat the eggs and sugar together. Beat in the melted chocolate and the vanilla and then the flour. Stir in the ginger and the remaining chocolate chips (2/3 cup). Let stand for 10 minutes.
Step 5: Drop cookie dough by tablespoons onto prepared cookie sheets; spacing cookies 2 inches apart. Press the white chocolate chips into the top of the cookies; dividing evenly among the cookies.
Step 6: Bake for 10-15 minutes or until cookies are done and are puffed and slightly dry on the top of the cookies.
Step 7: Cool on the sheets.
