Ingredients

The ingredients are:
  • 3/4-1 pound plum tomatoes, lightly seeded and chopped
  • 2 tablespoons sun dried tomatoes in oil, diced
  • 1 small shallot, chopped
  • 1 clove garlic, chopped
  • 1 tablespoon fresh lemon juice
  • 1/4 cup olive oil
  • 1/8 teaspoon dried oregano
  • Kosher salt to taste
  • 1 teaspoon whole peppercorns, crushed (more or less to taste)

How to Make

  • Step 1: Add everything to a blender and pulse until well combined. Add the salt and pepper and pulse again. Taste ... and check for the seasoning. When the dressing is finished, add to a small tupperware like container or small jar and refrigerate until ready to use. It is best served chilled. ENJOY!
