Ingredients

The ingredients are:
  • 1 clove garlic, minced
  • 1/2 jalapeno pepper (or green chile pepper, seeded and minced)
  • 3 tablespoons cilantro, chopped (fresh)
  • 2 tablespoons unsalted butter (melted)
  • 2 tablespoon olive oil
  • 1 teaspoon lime zest
  • 2 teaspoons fresh lime juice
  • Salt and pepper, to taste
  • 36 to 48 ounces lobster tails (6 tails, fresh or frozen, thawed)

How to Make

  • Step 1: Prepare butter:In a small bowl, combine garlic, jalapeno, cilantro, butter, oil, lime zest, lime juice, salt and pepper.

  • Step 2: With kitchen shears, cut away the soft shell of the entire underside of each lobster tail, towards tail and about 1 1/2 inches wide, exposing meat. Insert 1 metal skewer lengthwise through meat and out tail end of each.

  • Step 3: Heat an outdoor grill on medium-high and brush with high-heat cooking oil. Add lobster tails to grill, cut side down, and cover. Cook until shells are bright red, 4 to 6 minutes. Turn and brush meat with butter mixutre, dividing evenly. Cover and cook until lobster meat is opaque throughout, 4 to 6 minutes. Remove skewers and serve with lime wedges, if desired.
